A Gastronomic Journey of Palate to Vietnam via New World Manila Bay

There’s a Vietnamese proverb that goes “An khoe nhu voi” which translates to “Eat as strongly as elephant”. Vietnamese people love to eat and they spend much time in preparing their dishes giving much patience in its meticulous preparation.

This September 1 to 13, New World Manila Bay Hotel in cooperation with New World Saigon Hotel, Vietnamese Airlines and the Embassy of Vietnam in the Philippines showcases the refinements, vivid colors and exotic ingredients of Vietnamese cuisine in all its grandeur.

Patrons are invited to take a gastronomic journey to Vietnam with a selection of popular Vietnamese dishes and beverages amid the lunch and dinner buffet at the Market Café and Vietnamese coffee experience at the Lobby Lounge. This is like going to Vietnam without actually leaving the country.

Guest Chefs Tran Van Dong and Tran Thanh Thuy were specially invited from New World sister property in Saigon to prepare a delightful array of dishes, with each one highlighting a distinct flavor that reflects Vietnamese culture.

Vietnamese cuisine is considered one of the healthiest in the world. Its recipes include a variety of fresh spices and herbs such as galangal, lemongrass, mint, coriander, cinnamon, bird’s eye chili, lime, basil leaves and much more.

Traditional Vietnamese cooking is highly regarded for its fresh ingredients, minimal use of oil and flourish of herbs and vegetables, making it a healthy option. A balance of fresh herbs and meats is achieved with the use of dry and wet spices to create a distinctive taste.

Guest Chef Tran Van Dong has more than two decades of culinary experience at New World Saigon Hotel where he spearheads the preparation of Vietnamese cuisine.

In his younger days, he was one of the outstanding participants to the Vietnamese cooking competition held at a prestigious hotel. The impressive dishes he showed during the contest and his passion for good food won the hearts of New World Saigon Hotel executives and he was subsequently hired as part the hotel’s kitchen team. Thereafter, he had an illustrious culinary career for more than 20 years at the hotel which includes his participation in the Vietnamese Food Festival at Zurich, Switzerland.

He is joined by Guest Chef Tran Thanh Thuy who is known for introducing her fresh ideas in the kitchen. With her new recipes and artistic sensibilities for vegetable carving, she has clinched a Silver Medal for both Taste of the World Culinary Cup 2011 and Food & Hotel 2013 Contest. She also recently participated in the Vietnamese Food Promotion at New World Shanghai Hotel.

Featured Vietamese dishes:
Among some of the signature dishes by the guest chefs are Southern Vietnamese Salted Rice Flour Cake with Prawn and Pork, Water Fern Cake with Prawn and Pork, Pineapple Sour Soup with Prawns, Braised Catfish in Clay Pot and Vietnamese Rice Balls.

For starters at the lunch or dinner buffet, diners can sample an assortment of salads such as Chicken Cabbage Salad, Heart of Palm and Pork Salad, Traditional Vietnamese Rice Paper Prawn, Grapefruit Salad and Dried Squid, Papaya and Pork Ear Salad, and Vietnamese Poh Piah.

Some the famous main dishes include  “Pho” Beef Noodle Soup, Hue Beef noodles, Vietnamese Rice Pancake with Prawn and Pork, Vietnamese Chicken Glass Noodles with Bamboo Shoots, Vietnamese Caramelized Pork, Fried Prawn Skewer with Chili Salt, Braised Mudfish and Grilled Pork with Five Spices.

The must-try desserts are Sweet Mung Bean Soup with Seaweed, Corn and Coconut Sweet Soup, Sweet Banana and Tapioca Soup, Sweet Black Bean Soup with Coconut Cream, Sweetened Porridge Longan and Jelly, Lotus Seed Sweet Soup and “Baba” Sweet Soup.

Vietnamese coffee is dark and bitter with a hint of almond flavor. It is brewed in a single-cup filter which acts as a small coffee pot. It looks like a hat and sits upon the top of a coffee cup. Inside the single-cup filter is a chamber for coffee and room for hot water. Condensed milk is available at the bottom of the coffee cup.

Savor Vietnamese coffee whether hot or cold with a variety of Vietnamese delicacies for two persons at PhP 900 at The Lounge. Hot Black Coffee with Sweet Condensed Milk (Ca Phe Sua Nuong) or the iced version (Ca Phe Sua Da) can be ordered at PhP 250.
